Prep Time: 15 min.⠀⠀ Cooking Time: 30 – 45min. ⠀ Servings: 8 – 10
6 Cups 1 inch cubed day old bread (I prefer a French sourdough)
4 Ripe Bananas
4 Cups Non Dairy Milk (i.e. Hemp, Coconut, Oat)
½ Cup Maple Syrup
½ Cup Brewed Coffee
1 ½ Cups Raisins
½ Cup Chopped Almonds
½ Cup Chopped Walnuts
1 Tbsp Cinnamon
2 tsp Coffee Extract
Preheat oven to 350°F. Place bread inside 9” x 16” pyrex baking pan.
Mix in the raisins, almonds, & walnuts.
In a blender, mix the non dairy milk, bananas, maple syrup, coffee, & cinnamon.
Pour the mixture over the bread, raisins, & nuts.
Mix around until all the bread is coated with the mixture.
Add some more raisins and/or nuts to the top layer.
Sprinkle additional cinnamon on top, as well.
Bake for 30 minutes. Check after 20 minutes to see if it's done. If not, let bake for another 5 - 10 minutes.
If want a crisper top layer, bake for an additional 5 - 10 minutes .
(Or put on broil for 1 - 2 minutes)
