Vegan Zucchini Bread

Prep Time: 15 minutes Cooking Time: 50 -55 minutes Servings: 2 Loaves


2 Cups Whole Wheat Flour

1 Cups Spelt Flour

6 Tbsp Ground Flax Seeds (Flaxseed meal)

½ Warm Water

2 ½ Cups Grated Zucchini

½ Cup Applesauce

¾ Cup Coconut Sugar

¼ Cup Maple Syrup

¼ Cup Hemp Seeds

½ Cup Oil (I prefer Coconut Oil)

1 tsp Vanilla Extract

1 Tbsp Cinnamon

2 tsp Nutmeg

1 Tbsp Baking Powder

½ tsp Baking Soda

1 tsp Salt


1 Cup Chocolate Chips or Raisins.


Grease two loaf pans with Coconut Oil.

Mix together flax seeds and warm water.

Add sugar, Coconut Oil, Applesauce, and Vanilla; beat well.

Add grated zucchini; stir til combined.

In a separate bowl, sift together remaining dry ingredients.

Add dry mixture to wet and stir just until dry ingredients are moistened and everything is incorporated evenly; some lumps are fine. If adding additional mix-ins, fold them in now. Divide batter between prepared pans.

Bake at 350° Ffor 50-55 minutes, or until knife inserted in center of loaf comes out clean. Let cool a few minutes before slicing.
