Ingredients:
1 cup Peanut Butter (Homemade or store bought)
2 - 2.5 cups of 82% or higher Dark Chocolate
Optional:
1 Tbsp Coconut Oil
1 tsp Cayenne Pepper
Kosher Sea Salt
Directions:
If making homemade Peanut Butter, blend peanut in a blender (preferably a Vitamix, Blendtec, or CuisineArt) until desired consistency is reached.
Melt 1 – 1 ½ Cups of Dark Chocolate over a low flame (if using cayenne, mix during this part of the process).
Once chocolate is melted, put about ¼ to ½ inch high into each individual baking cup.
Place into the freezer for about 5 minutes or until the chocolate has set.
Take about a small spoonful of peanut butter and place it into the cups, to create the middle filling.
Melt the rest of the chocolate and place it into each individual baking cup, fully covering the peanut
butter and creating the top layer of the peanut butter cup.
If using sea salt, sprinkle over each cup while the top layer of chocolate is still melted.
Place into the freezer for about 5 to 10 minutes.
