Sweet Wild Ramps Salad Dressing


Prep Time: 10 min Cooking Time: 5 min Servings: approx. 4.5 cups


Ingredients:


1 Cup Avocado Oil

Organic Sweetener (to taste)

- Maple Syrup: 2 - 3 Tbsp

- Agave: 1/4 Cup

- Honey: 1/2 Cup

½ Cup Organic Raw Apple Cider Vinegar

4 – 7 Ramps (bulb & stems), coarsely chopped

1 Green Onion (bulb & stem), coarsely chopped

2 Spring Garlics (bulbs & stems), coarsely chopped

2 Tbsp Dijon Mustard (or 2 tsp Dry Mustard Powder)

½ tsp Sea Salt

2 pinches of Pepper (white or black)


Directions:


In your blender or using a handheld immersion blender,

blend all ingredients except ramp leaves until smooth.


Add chopped ramp leaves last and pulse to gently chop/combine.


Serve immediately or will keep in the refrigerator for up to a week.
