Prep Time: 10 min Cooking Time: 15 - 20 min Servings: 6 – 8 servings
Ingredients:
8 oz Ramen
½ Onion, sliced
5 Garlic Cloves, diced
2 Tbsp Fresh Ginger, diced
2 Cups Cabbage, sliced
1 Red Pepper, sliced thin
1 Medium Carrot, sliced thin
1 ½ Cups Mushrooms, sliced (Shitake, Portobello, and/or Oyster)
1 Medium Zucchini, sliced thin.
2 - 3 Tbsp Extra Virgin Olive Oil
Sauce:
1/3 Cup Soy Sauce
1/3 Cup Water
2 Tbsp Sesame Oil
1 – 2 tsp Red Pepper Flakes (depending on how hot you want it)
Salt & Pepper to Taste
Directions:
Bring water to a bowl in a medium-sized pot.
Prep all the vegetables, including the Onions, Garlic, & Ginger.
In a pan on medium heat, add EVOO, Onions, & Garlic. Sauté for 3 – 4 minutes.
Add the Ginger & sauté for another 2 minutes.
When water starts to boil, add Ramen & cook for 6 – 8 minutes. (Take out after 6 minutes if you prefer it al dente).
Add all the vegetables to the pan and cook on medium heat for 7 – 8 minutes. Covering it on and off during this time.
While the vegetables are cooking, prepare the sauce .
Add all of the ingredients for the sauce into a bowl and mix for 30 seconds to a minute. Add more of each ingredient to your desired taste.
